How do I adjust the clock to the right time?

Mine has to be pressed very hard, at just the right angle to work. Yours might be the same. Been meaning to fix mine for the last 9 years!

wait till the clock in your car is at a precise hour of day and disconnect the battery...then wait till the time matches what the clock is at and reconnect it? ;-)

I like the way you think, but I'd pull just the fuse so as not to clear the ECU, radio presets etc.
