I believe the issue is more about matching the tread width to rim width ratios so the sidewall flex is consistant front to back. From the tire manufacturers point of view there is acceptable and preferred and THEN the issue of the other tires and rims on the car.
Either way, the differences are subtle, and if I couldn't have the 7.5's, I'd rather have the 225's on 7's then the 205's

I have used 225s on three different cars using 7x17s, all on track for the past 5 years, and they have been excellent. MANY of the track folks I run with use 225s on 7" wheels and are happy with them. 225/255, or 225/265 will fix your problem.
