Considering letting the wheels go along with some other parts to return it to stock.

Hard to explain..

To be completely honest, the car doesn't get driven as much as a lot of other cars around here might be driven. I thoroughly enjoy it when I do, but that's very rare. I realize while the car is sitting it's appreciating in value, however, the parts on the car are not. Money isn't tight, but there are certainly better uses for it. I don't believe the parts really add any value to the car as-is if I were to actually sell, as the average buyer would likely be turned off by my taste, and prefer closer to an original condition. That being said, I've been him-hawing back and forth on whether I should return to original, or just continue to sit on the parts.

Oddly, I get more enjoyment driving my 1980 Corolla around town, than the 964.

Sounds like you need a road trip. Grab the keys and go blasting around b-roads for a weekend. Before you know it you'll be grinning again.

If you aren't selling then don't even think about it. Especially if nothing is depreciating...

That's because your Corolla is easy around town? It can't be easy to drive the 964 when it's so low. Return it to less of a show car and more of go car. These cars are awesome driving machines and thus love a proper beating on round b-roads.

Wow! Never thought I'd hear that comment. lol. But I get it, I have a 89 Honda CRX that I get a kick out of driving every once in a while. Totally different beasts, but the 964 is definitely the one I love driving most. To each his own though. On a side note, say it isn't so! You've done such a wonderful job modding your car that's its a shame you'd let it go. Hope that's not the case.
