Because the the coupe metal roof is far lighter than the cab top + motor -- around a 35-50lbs difference. Then cabs have structural members added to make them stiff enough without the roof -- that is probably another 50-75lbs. In the 996s & boxsters, you then have integrated roll hoops...more weight there.
