Default Remove airbag control module

I have a dedicated track car where both airbags were removed already

I noticed that under the dash there is still some module with an orange sticker and I guess that it s some airbag control module or crash sensor and I would like to know if there is just one fitted to the car or if there should be a second one and I would also like to know if by removing it from the car
the system used to not get a dashboard warning light would still work

I read that if the correct porsche airbag warning light disable plug is used on the center console then not only the warning light will stay off but also the ( ! ) light will not be turned on each time you start the car... is it still the same if you remove the control module?

That is correct.

I can't comment here, I used the disable plug and see no need to remove the module.

Removing the airbag module will remove the connection to the central informer and will prevent the warning light. You’ll need to jump the T6 connector to continue getting 12v at the DME term 86 since the system is designed to disable power if the bags deploy.
