Top thresholds for oil temp, water temp, and oil pressure?

I installed an oil temperature, water temperature, and oil pressure gauge in my 1987 951. They all have "alarms" on them for when they reach a certain threshold which can be adjusted.
Does anyone know the various temperature and pressure that you don't want to exceed when at the track?

What do you want to use the alarms for? As an "early warning to keep an eye on things" or as a "shut the engine off NOW" notice?
If water temp gets over 240, I'd get pretty nervous. If most oils go over 260-265, they start to break down.
Is it a standard oil pressure gauge? If so, then I guess 1 bar would be about the min limit. However, it's nice to do something (like on my Aim dash) where the alarm has an RPM limit, too. E.g. if the RPMs are over 3,000 and the oil pressure goes below 3 bar.

On pressure, not sure there is a do not EXCEED limit. ANd the minimum is a function of RPM. General rule of thumb is minimum 10PSI for every 1,000 RPM.
