Both of my 89 turbos don't have split rear seats. One VIN ends in 0176 and the other in 0987 so who knows. I am 100% sure one rear seat is original and 99% the other one is as well.

I'm pretty sure all of the '88 Turbo Ss had the split back seat (everyone I've seen has it). But, remember, the '89+, while having most of the S goodies, was not marketed as an S, just a Turbo - so it seems logical the split back seat was an option.

My understanding is that early model year (1989) Turbo's had split seats, headlight washers and brake cooling ducts. Then at some point during the production year, in efforts to save money, Porsche stopped including these items. Mine does not have split seats and was produced later in the model year, I do not have the date in front of me.

As said, it was an option.
Split rear seats came with the "elastic" luggage cover which was held partly laterally by specific plastic "hooks" on lateral trim panels.
Since rear seats always fold down, cars that came with split rear seats feature a pivot connection on the shell that go through the center of the seat panel. That should definitely say if there should be split seats or not.
