IMB951- I bought an 87 block from Lart and the next day he got the 2.7 motor he is looking to unload. Not sure which direction I will go in, but I'm going to wait until the block I bought gets here on Monday. Lart put a link in a different post that shows damage to JE Pistons that came in contact with the cylinder wall, so I don't think I will be using them. Maybe all this talk of heat expansion problems with JE pistons is true.
I hope my car is back on the road within a few months. If I go the 2.5 route, it'll be on the road faster than if I decide to go a 2.7 route.

Gotcha. Well either way, I hope everything comes back together quickly for you.
IMO, .2 liters of displacement isn't worth waiting and spending all the extra money on parts + tuning, unless you score a deal with Lart's 2.7 package. But like you said, the 2.5 is already on it's way and JE pistons have a bad rep, so.... kind of a catch-22 at this point.
Your car will be faster than you've ever known it to be either way once it's done, so good luck with whatever you choose to move forward on!
