Tear into it, its not that difficult. IIRC, the 968's use different wiring (not that different, but the colors of the wires changed between the two cars). Since I went the non-power mirror route, I didn't have to deal with it, but I would think you would extract the pins out of the connectors that are on the 951 mirrors, and then use the connector body to plug in the pins from the 968 mirror motors, and then it will connect to the factory harness with no issues. Its really pretty easy and as long as you draw out the wiring diagram on paper ahead of time, its straightforward.

You may be able to transfer that stuff over from your flag mirrors
You are missing these parts
What comes to installation instructions of these mirrors, there's no need of any "special tools" (check this picture)
When you just need a socket extension, and powerful hands.It just takes few seconds per mirror to assemble them
A bench wise makes it even easier.

Funny tangent…a bunch of years ago John Force (top fuel funny car racer and ‘big guy’) realized that they were spending thousands of dollars on titanium this and that to take each pound off the car. So he went on a serious diet / training program and lost about 50 lbs….

So I'm missing two cam bolts and 2 springs and my current flag mirror ones can't be reused? If I can't reuse my flag mirror stuff, what are the part numbers of those cam bolt/springs so I can order them?
Do I need to pop off the mirror glass to see if these 968 mirrors are power or not?

Assuming the 968 glass attaches the same as the 944 glass, tilt the mirror all the way in at the top and then take a small screwdriver and slide the plastic ring that holds it in place. And yes, if they're manual (and I suspect they are but hope I'm wrong) then you don't need the cam bolt.

Its easy to tell if they are power or manual –the power mirrors will be stiff and notchy to adjust the mirror position, the manuals will move freely.

Well, good news, bad news. The good news is that they're power mirrors, I was able to see the wiring harness in the drivers side mirror.
The bad news is that I cracked the drivers mirror glass trying to get it out of the housing.
So where's the best place to order new glass? I'll order a set, just in case I crack the passenger side mirror too...

Damn, the glass isn't so cheap! Sunset wants $75 for the drivers glass, $90 for the passenger! Waiting to hear back from Jason at Paragon, they sell the whole damn kit for $360. Mirrors, bolts, wiring, etc, etc.
The harness wires are cut on my mirrors, I don't have the plugs. I assume I can cut the plugs off my current mirrors and splice them onto the 968 ones?

You should be able to use your plugs from the existing mirrors and you will just have to figure out the wiring on the 968 as it is pinned out differently than the 944, IIRC there is an extra wire as well.

The backs of the mirror glass connect to an elctrical "cradle" if you will. That should have wiring. The wiring from you existing mirrors has to be modified and connected to the 968 wires, in the mirror. You already have the 4mm allen bolt that afixes the mirrors to the body, just reuse the one you have. I went to radio shack to get the crimps, etc for the mirrors.
