The viscosity, within reason, means less than the actually oil composition. Do a search for ZDDP.
Motorcycle oils tend to be much higher in ZDDP than oils designed for catalytic converters.
The pressure, itself, as long as it's within specs, isn't so important, unless your racing. 5w-60, made properly, with the right components, won't help or hurt longevity.

I'm running royal purple 10w-40 and am getting around 3-3.5 at idle now. When I was running rp 20w-50 I could never get it below 4 at idle (street driving).

unfortunately its all a waste of time. unless we all run a mechanical oil pressure gauge and a temp sender in our oil we will not see any true results.
one persons hot oil temp is someone elses medium temperature. the oil pressure gauges and senders on these cars are not what one would call accurate.
even though our oil pressure gauge only goes to 5 BAR, the oil pressure relief valve opens at 8 BAR. that means when you rev your car when cold to say 3000rpm you will get the oprv to open which means you are exceeding 8 bar. there is no such thing as excessive oil pressure(if your OPRV got stuck closed it will blow your oil filter clean off)....there is such a thing as insufficient oil pressure.

The Porsche OPC in Switzerland recommended Mobil 1 5W-50 for my 951 when I bought it back in 2000 and it's worked very well for me so far.
I don't think the motorcycle 10W-60 will harm your engine at all, but I would go back to regular Mobil 1, personally, since it's specifically for performance automobile engines.
On another note, Velns, do you still have that wildly amusing video of you driving a Benz in the snow to the sound of BT? Link please! That was great!
