You should really do a search on the subject, there is a lot of information here on venturi delete. I know I wrote a procedure, and a parts list at one time...

3ft of 3/4" heater hose, 2 male/male 3/4 adapters, umm..., if you can 3/4" 90 degree elbow for top of aos. Hose clamps, and something to plug the jboot. Also are you using a boost controller since you wont have the cycling valve? I remember i bought some 3/8" hose, but for what...? Probably not for the venturi!

But, this doesnt replace all the kinked factory hoses, but allows you to delete the venturi. Mine werent to brittle so I left them so I could go to sebring!

Gates #24879 hose is the perfect substitution I found out today. 3/4", already has a 90 degree bend in it for the OAS connection, and is about 3 feet long. Perfect if you are running a maf, or if you are running the J-boot, then you just need a male male connector for the j-boot end.

What is the big advantage to deleting the Venturi? What needs to be removed (head, intake, etc.) to access the Venturi?

Its real easy. Probably 30 minutes to pull it all off. Start with intercooler pipes, then the fuel rail, then the 2 bolts on the rear of the IM, 1 hidden bolt in the front of the IM, the little bolt that holds the dipstick, disconnct the throttle cable. Leave the Throttle body on (much easier), then the 8 IM bolts and voila! And when your in there definetly replace the vacuum lines with sylicone ones from lindsey! I would very much so also reccomend a 5 port laust vaccum manifold. It all sounds a little complicated but once its all apart its plain as day!

One quick highjack if I may, when I did this all, I lost 2 hg of vacuum pressure!!! Sucks, anyreason why???

Dont worry thats not common though, At least i think, I heard one other lister with the same experience(a red 951, dont know his name offhand)

And if you want to replace the ISV hoses at the same time:
