Does anyone know approx how much it would cost to replace a headgasket, radiator, water pump, and switching fans. Let's make pretend that labor cost was $75 per hour. What will this total?

I was afraid of that. You may want to a search on "Milk Shake" or rebuild. I suspect it will be in the 2k range.
head gasket set ~$150
Studs ~$150
waterpump $114-$222
radiator $309
fan switch ? ~$30
misc parts and fluids ~$75-$100
So roughly $1k in parts.

Do it yourself. Then you can pay yourself that $75/hour!
And id say that while youre in the doing the pump and rad, do the belts and rollers too. Maybe even a front end seal job. Big huge snowball yes, but worth it to get all those fiddlyass jobs out of the way. Doing them all at once is far less of a headache than one by one.
