Forgot to mention that at the same time as I measure high temps (over 100C/212F) at the water bridge, my oil pressure is lower than ever.
With 10W-40 I used to see close to 3 bar at hot idle, yesterday it dropped below 2.

To me this is an extra indicaton that the engine is actually heating up more than it used to, and this being more than just an indication failure.

It seems to have been discounted but did you change the inner seal when you changed the thermostat? The seal doesn't come with the thermostat so gets overlooked. Mine was in bad shape when I did mine. If that seal is duff then it can stop coolant flowing into the radiator.

So far, this is what I have:

-Temp gauge has increased indicated temp over the last two driving seasons.

-Re-filled viscous fan, but not sure if it really helped..

-New thermostat replaced with new rear seal.

-New radiator.

-Resistance values from sensor equals temps around 90-95 degrees C.

-Ir gun reads 93-94 degrees C at upper hose, water bridge above 100 C (212F). At this temp the lower hose is at 60 C (140F).

-Oil pressure at high indicated coolant temps are lower than ever.
Used to be slightly under 3 at hot idle (10W-40), now it drops under 2.

Any hints what to look for?
I would like to try another good working viscous fan, but have none available at the moment.
