Unless you have/had water ingress into some of the linings or some type of organic material hiding somewhere (foodstuff, critter stuff, leaves, etc..), the only other thing left to address would be the evaporator. Washing all the carpets is a great idea too. When I did mine, it cleaned them up nicely and brought up the carpet nap. Pull the rubber boot and take a look at the evaporator chamber. If there is a lot of 'stuff' in there it will all be organic, and can lead to an aroma. Here is how I cleaned mine out. Easy task. After you do all these things, the only thing left should be the old German car aroma.

Don't forget to refresh the glue for the center cassette box cover lining and the small felt pad. By now it is turning to dust, will stink, and is one of the closest sources to your nose. You can wash the lining and glue it back slightly damp to help stretch it back into shape.
