Converting memory seats to non-memory

Is it as simple as replacing the motors and seat switches from a non memory seat?

Much simpler than that - if they work manually... just unplug the memory control pad in the drivers door.
Pull it up - it's just a friction fit - then unplug it. No more memory on the seat or mirrors - just manual mode.
However I assume you'd only want to do this because of some seat issue?

Ok, I have somebody putting the 91 GT seats in his '79 convertible. I would like to keep the memory related stuff if possible.

I would not describe this as simple - by any means!!
This is a total reconstruction of the seat. You will also need multiple high power switches for the manual only mode that are very expensive, memory switches should not be used on non-memory seats - they are light duty switches.
For all the work this entails on presumably 2 seats (but maybe 4?) this is likely not worthwhile. The chance of damage is actually quite high especially to the feedback potentiometers - and without those the memory features won't work anyway.

Good god I am not swapping. I would pay my upholsterer to swap the leather before that. :-)
Ok, plan 'B'. Assuming 79 has power seats on both sides, I would need make sure the constant power and ground on the '79 connector matches the connector in '91 GT.

Yes it would likely be easier to repad the seats and swap over the leather covers - however early seats are a slightly different shape.
The connectors do not match. You need an 8 Pin seat connector to match - I think Roger sells them. You can ditch most of the connections. Do the seats have heating?
If not all you need on the car side on the '79 is Pin 6 Battery Power, Pin 5 Ground:
Mapping these:
Pin 2 of (14 pin connector on '91 seats) Red -> to Pin 6 on '79 seat connector
Pin 1 of (14 pin connector on '91 seats) Brown -> to Pin 5 of '79 seat connector
