I think the cop will see the car pass at 140.
The seller is showing us the strategy with his pictures... notice in the pics that the car is still, and is hiding.
Before the cop catches up to you, you quickly pull off at the next rest stop and hide under a tree, or maybe near a bush, until the cop passes.
