A bypass will get you started by defeating/replacing the final muffler under the rear bumper cover.
Then you would probably replace the middle mufflers with straight pipe.
This could cause the car to run lean/hotter. And maybe melt the cats but probably not.
This may reduce the overall laydown of HP/TQ.
This will annoy your neighbors, and many passengers in the car.
So you'll be making all this rackett and I'll guess putting down about 260HP at the wheels. Ricerbait.
In addition to those oppressive smog laws..I would be surprised if you weren't subject to noise regs, probably through the community rather than the DMV though maybe the latter too.
What level of preventive maintenance has been done to ensure that it doesn't turn into a left coast fireball (old fuel lines) or paperweight motor (old t-belt) of its own accord? Be sure its safe/reliable or it will be parked more than it can be driven.
Advice? Mine would be tend to the latter stuff first (safety/maintenance) then temper the noise objective just a bit so as to avoid being a rampant poser.

rmb = rear muffler bypass. So I think we are talking about the same thing.
It is not too costly to get one that has been built to fit, it is easy to install, and it is reversible.
If you bypass both the rear and mid mufflers, It will be reallly loud! Even the factory cats don't dampen the sound much at all. Probably sound great around redline, but below that....
But, its up to you to decide whether you like it- once the stock pipes are hacked its a longer road back. Best bet might be to find out when some local owners are getting together, there will probably be some different configurations there.
The rear muffler does a lot of the dampening. Bypassing that by installing pipe will make it a lot louder.
I think some folks are running factory cats and the stock middle mufflers. Some have replaced the middle mufflers with flowmasters or other high flow/louder muffler. There are some on youtube you might be able to hunt down, but its not the same as being there. There are also so many threads on here-- if you run a couple of searches there are many many variations described.
Or you can just throw down large cash for pre-built:

There are two types of middle mufflers, a larger and smaller version. The smaller ones were on GTs, GTSs, and tend to be louder.
I'd say start with the RMB. That will be better, but may not get you what you want. Next step would be to cut out the mids or replace the mids with aftermaket- magnaflow, flowmaster, whatever.

Lizard is good to listen too.
BUt noting your sig-- changing cams is pretty ambitions on the first car. I did but that was just an old Pontiac..6.5L...but only one cam...
If you spring for the x & high flow cats- if they'll pass cali inspection, and then do an RMB....my wild guess is you will have close to what you want. Its very assertive.

Just the RMB, rear muffler bypass- you'll notice it..it may draw some extra attention in the parking lot....folks will note that yes, Porsche did make a V8...but it is mellow enough that if your driving doesn't merit a traffic stop, the exhaust probably won't earn you one in its own right!

To me, the best sound with my 90GT was stock with RMB. However I do like my GTS with x-pipe, sport cats, mid mufflers and RMB.
GoPro mounted on rear window. Had a small leak at the rear of the each of the cats when this video was made.

The stock cams have a rumble, with cams the car screams, which is what he is looking for.
