im really wondering if any track would allow that seeing as it is made of wood, hit a bump, shredded pieces of plywood all over the place = track safety issue

no metric turnbuckes here... 5/16" from home depot

im really wondering if any track would allow that seeing as it is made of wood
You have no idea what your talking about.
As long as the splitter can support ~200lbs the material is irrelevant

wood is actually better for the car because if it all goes to hell, wood will simply break instead of ripping off the front end of your car.

Which would you rather run over, wood splinters or metal shards?

F1 cars ran wood skids under their cars for years. Many airplanes are wood. Morgan sports cars have wood frames. Wood is still the best material for boat stringers. Its feels good to have wood

When the splitter turns into splinters what happens to the metal turnbuckles and the L brackets and screws?
then you have a blowout, a horrible crash, and a fiery death

actually there are no screws for that exact reason, used rivets instead. Turnbuckles with massive washers stay with the bumper the wood rips off that... in theory
