GT: revs at 3200 rpm at 80 mph due to 2.73 rear end
S4: revs at 2400rpm at 80 mph due to 2.20 rear end.
That's the biggest difference you would notice from the driver's seat. If you cruise at 85 mph the GT will feel like you need another gear and the S4 won't.
Having owned both I can't agree that it is the only difference you will feel.
With exception to the tires & A/C my 87 S4 was running extremely well and my current GT is also running extremely well and there definitely is a difference in how these cars drive.
The S4 is far more relaxed around town and the torque at lower RPMS can be fun. It does lose some of its edge as the RPM's climb.
The GT feels edgy and ready to let loose although when you do hit the go pedal the PSD really helps control all the power.
They are both great cars and have their advantages. The GT does feel faster though, at least to me it does.
The most noticeable thing driving a GT with the gearing and torque curve is the engine braking when you lift. It was huge, almost made my 90GT undriveable when the roads were even a little slick. It did however make the car a joy to drive on the highway at high speeds, you never had to touch the brakes to slow down from triple digits very quickly when acquiring the next group of slower cars.
There are differences between countries in the differences between model years.
US GT's did not get sport seats. Here's the whole listing from 928 registry:

* Wheels were 8x16(front) and 9x16(rear) "club sport" with an offset of 60mm with 225/50 16(front) and 245/45 16(rear) tires
1989 928 GT is further differentiated from the S4 by the following options (option codes are located on the inside cover of and original owners manual or on a white sticker located in the rear hatch area opposite the spare tire and above the gas tank):

Cup holders are for chumps who cant drink out of bottles. The only people that need cup holders are coffee fiends and those that eat too much mcdonalds and other crap where your sugar drinks come in paper cups with plastic lids
Try drinking water from a bottle. You screw it off to drink, when your done you screw it back on and you can set it on the seat. No leaks, no drips, no problems!
