Is that carbon fiber baked at all? Or simply set with the vac bags?

Typically carbon fiber has to be baked, usually in an autoclave (big oven) with vacuum bags to hold the fabric and adhesive to the mold. The adhesives, usually in sheet form, are typically kept in a freezer until ready for use.
I agree we need more pictures and this car deserves it's own thread AND there would be lots of interest in additonal components for sale.

Here's my CF hood.
Notice the fittment issues. Oh yeah, and the cops.
Here you can really see how the curve doesn't match. I think it could be brought in with some aero latches or similar.

That work is amazing. The vision of the design and complex contours are way beyond normal composite work. He is a god.
How does he go about it? Is it one off lost foam plugs formed by hand or is there some reusable tooling?
I was just finishing up a CF airbox and inlet ducting and it looks pathetic even after a reasonable effort. It's so bad I'm considering glassing over it so I can add filler and paint I'm "Anti-composite Mike"

Well after that tour de force, I'm almost ashamed to attach this photo, but each to thier own, I made these myself, indeed apart from the welding on the intercooler everything was done by me.
I was going to add an image in here, but thats not happening for me today.
