You can use 295/30 tires on the rear. They won't touch the inner wheel well walls, and as Aryan and Stan have indicated, moderate spacers will work fine on the rear. You can go as wide as 20mm on the spacers with no problem. 1" is a tad wide, and might require rolling the fender lip. Fronts are fine. I use 255/35's there, with the 295 rears on my '89 and on my GTS.

+1 on the spacers, exactly what I am running on my '87.
I do have a set of Ott's rear fender flares sitting in the garage waiting installation, so rears should be fine - have to see what size spacers would work best for those.
I was more worried about the fronts, but sounds like they'll be just fine!
