brake light switch
My doesn't have the switch at the pedal cluster. My problem is it takes quite a bit of pedal travel before the brake lights come on and I'm getting tired of people almost rear-ending me in traffic because they can't put down their latte. How can I adjust the brake lights to come on more quickly? I figure there's a sensor near the booster, just haven't found it yet.

It would be possible to change the brake light switch from the dual hydraulic switches to the single mechanical brake pedal switch. That might make the brake lights come on a fraction of a second sooner - probably less than 0.05 sec, which is not much of a gain.
If you do this, you would need to keep the dual hydraulic switches and their wiring if you want to keep the hydraulic circuit failure capability.

It has to do with the pedal travel, not really the speed they come on. I can use the brakes in traffic lightly without activating the rear lights, which means latte-girl behind me doesn't realize I'm slowing down. That's at least a couple inches of travel before the lights come on. I'd like to get them coming on really as soon as I touch the brake pedal. Is that kind of adjustment possible?

You need new switches. They are mounted to the bottom of the master cylinder and are hydraulically actuated. They can yield over time and there is no adjustment. This happened to me when I replaced faulty ones with cheapies. They are a common VW part so, at the time, there were several choices between $4 and $25.
