Default electric fan conversion temps

Now that I've been running with an electric fan conversion for a little while, I've noticed a difference in the way the engine temps operate. With the belt fan and running at speed in hot weather, the temp gauge would remain dead center on the gauge. In traffic it would slowly creep up and slightly above the upper white line, and the aux fan would kick in. Now with the new radiator and electric fan (which only runs when the coolant temp reaches 195), it still remains dead center at speed but will rise to the upper white line quickly even at around town speeds, let alone traffic. However it stays glued just below that line and never exceeds it because that's when the fan comes on. The aux fan will come on too, just like before. Even in stop and go traffic with the a/c on, it remains a half-needle below the white line.

I've checked with an IR gun and the temps remain anywhere from 155-ish at the bottom of the radiator to just over 200 at the water bridge. I've heard the engine is designed to run at 195, and it sounds like this radiator/fan setup is keeping the engine right at optimal temp. So while I do have to get used to seeing the gauge average a little higher than before, it looks like it's working exactly as it should. Anyone with the conversion see similar behavior?

I did have a couple challenges with the fan installation, but overall I'm very happy with it. The radiator is a work of art and looks like it works exactly as advertised. Even with no fan running at all in 90 degrees with a/c running, it keeps everything nice and cool.
