Changing to the later exhaust manifolds is an option, yes, although just working from the stock ones back on a 16V is appealing because it is really easy to do.
I have Roger's Y-pipe and optional high-flow cat, the stock resonator (which is basically a straight pipe with some perforations in it and a chamber around that) and no rear muffler. Below 3000 r.p.m. it's not all that loud (I cruise by cops all the time and they don't notice at all - windows-up freeway cruising is quiet and you can talk easily over the sound of the exhaust), above 3000 r.p.m. or at w.o.t. it is very, very, loud. Get you in trouble loud. Probably too loud for some people.
I agree with Mark, the sound of the single is really great when it is uncorked. I also experienced a drop in low torque in trade for stronger pull above 4500 r.p.m. - I also like it this way.
I tried the rear muffler on this setup, also gutted the rear muffler, and wasn't happy with the results in either case. The car sounded more like your typical V8 muscle car with the stock rear muffler, gutted or not. Without it the car sounds completely different, not like an American V8 at all. When I put it in, I cut the right side pipe, about 18 inches back, and re-connected it with some flexi-pipe. Then drove it to a muffler shop to have them weld in a section. Cost like $50.
One thing I'm not clear on is whether an '85 Y pipe fits on the manifolds when mounted to the 16V heads. Maybe the exhaust ports are moved a little. Anyone?

1979 Headers into a y pipe thru a cat, duels into a duel in duel out muffler then a RMB. Sounds awesome, no drone while cruising, real healthy idle and when you hit the gas she sounds MEAN. I mean really MEAN. Burbles when you let of the gas, I love that to. Especially after wot.

Why pay for an RMB? I went to my local muffler guy that has done all my exhaust's in the past, cut the muffler out and welded on pies's(extended the duels out the back.) and that was that. Cost me 30$ Took him 15 minutes!

When the pumpkin finally died 2 weeks ago -I went with a moroso spiral flow in black -got the 3" by mistake but it's welded on anyway.

I ran a few different exhausts, and I found the best sounding one was a Flowmaster, and then a Monza resonator tip.
You can buy both the muffler and tip online, and then take them to a local muffler shop to install for a pretty reasonable price...

I have two examples.
I bought an aftermarket 85 replacement downpipe/cat from Eastern Catalytic for UDS 32 V cars and installed it directly onto an 84 16V motor.
Also, I removed a stock 84 exhaust system from the 84 Stan Shaw 16V car and installed it directly onto the 85 32V car I bought. ( 85 system sat 10 years and rusted through, so I switched them to pass inspection with the 85). Perfect fit, except the exhaust heat shield needs to be cut because the O2 sensor is in the wrong place. Other problem is that the downpipes are actually smaller diameter on the 84, which clearly restricts the 32V car from breathing.
X pipe, like Y pipe, should directly bolt to the 16V motor if 16V headers are retained.
The only fitment problem is when early 32V headers are mounted to 16V heads. Then, one side is too short to match a downpipe, X pipe or Y pipe and needs a short adapter.
