Which ATF
This may sound like a trivial question, but I was given a LARGE number of options by the local NAPA store, when I went to get Dextron II ATF. Apparently, there are a number of options/variables associated with this fluid and there is also the "synthetic" issue. Is there anything specific to "watch" for when selecting ATF for the 928 auto-trans?

I've been using Mobil-1 synthetic for a couple years now and no ill effects. Car shifts better/smoother/stronger, but I can't point to synthetic as the reason-- It might have been the same with new dino.
A couple folks have come to me and mentioned that they have had trans problmes following a change to synthetic. Many have stated that they have also had good results, so take it all with a grain of salt.
The only benefit that synthetic brings to the table is a better tolerance for high temps. Otherwise, unlike engine oils, synthetic ATF is not any slipperier, thinner or thicker than conventional ATF. I don't flog the car at all, no trailer pulls or hard-throttle operation, so regular stuff would be just fine.
The current Dexron-III/mercon fluids fill the standard for Dexron and Dexron-II called for in the various years of 928. Pick a good brand for your baby, and go for it.
For those reading along at home, remember that the change interval for the trans is roughly the same as 2x the factory engine oil change interval, or 25k to 30k miles. So swap in some new ATF every other oil change...
