Clear-coated would be nice, but in my experience wet layup can result in bubbles in the resin at times & filling these in usually requires some kind of surfacing putty. Sometimes you get lucky though!

Like Ryan says it is getting more an more expensive since it is getting harder to get hold of.
Maybe not an issue for a dash or similar more than the material price.
I visited the building place of Ericsson's (Telecom company here in Sweden)making of a 60 feet carbonfibre sailing boat for the Volvo Ocean Race and got a guided tour.

They told us that the constructor and designer of the boat alreday had the carbonfibre secured for the build and it came as part of the deal when they contracted him
Most of the workers building the boat has been flewn in from New Zeeland, Australia and other countries around the world.
Everything almost on these boats are made in carbonfibre for weight and strength reasons, even the toilet...

If you are doing this for weight saving reasons it is doable, if it is strength requirements involved it will require some experince with CF.
