I've fashioned a piece of aluminium to replace the
rubber accelerator pedal & footrest
in my '89. Now what do I have to do to give it the 'brushed look'?

ssuming that the surface is smooth after your handiwork, try a Scotch-Brite scrubbing pad. These come from Home Depot stores and the like, in different "grits" for different finish quality. Once you have the look you want, seal the finish with a clear acrylic to preserve it.
Remembner that the aluminum will continue to oxidize unless you seal it or anodize it. Finger prints are acidic, so the last handling steps prior to painting should include gloves.
Anodizing is a relatively inexpensive process, and usually includes the prep. That prep can easily include adding the satin finish you desire. If this is a part you will be showing off, this is the way to go.
