Get it running in stock condition; buy a whole bunch of stock parts.
Take most of the stock parts off, and put in basement. Replace with un(der)engineered, less reliable parts.
Buy another 928. Repeat.

Wow, what a twisted image, Jim swimming around a helpless new owner in circles, holding up replacement parts.
Big mistake people make with a 928 is trying to be reasonable in what you do, it doesn't work with women or 928's (no offense intended). Toss the reasonable thing out the window and your home free.
With an event like SITM so close, and such a great opportunity to see a wide variety of 928's, I would keep a real lid on expenses and focus on safety and elbow grease. One or two people here have suggested that I might be wise to consider a newer model with less of a list instead of restoring my 83. If you find a car that strikes a special chord for you, waiting is good.
As far as I know with the exception of the dash and pod the interior can be dealt with bit by bit. I wouldn't touch the dash and pod without planning to restore everything. Do it once, do it right, have it last another 25 years.
