I run a 275 on mine, but a 285 is not too much and maybe even a 295 is still not too much tread width for the rim, depending on tire model. Weather it will fit under the wheel well is dependant on offset, sidewall height, ride height and maybe even tread pattern.

It's a Fittipaldi. I'll take a pic of it. Whats the easiest way of finding the offset?

Take a straight edge and put it across the back of the wheel. Measure the distance from the straight edge to the mounting surface, which is the backspace. Now measure the entire width of the wheel and divide that number by 2. Subtract that number from the first number and you have the offset.
Example:
Width of entire wheel=250mm
Backspace= 175mm
1/2 X width = 125mm
175mm - 125mm = 50mm

What's the offsets that'll work for a 10" width rim?

47 works for me and up to 65 with a 17mm spacer has also worked ok for me.

11" rim uses 63.5mm offset for a perfect 928 fit. (8 1/8" backspacing) on a 10" rim, you wan that back spacing to be 7". To keep the same closesness to the fender. any less backspacing will bring the tire toward the chassis.

as was said, 295 fits well, as well as if you can find one, a 305. 315s are too tight on the 10" rim

Overall rim width is 10.75", back spacing is 8". Therefore the offset is 2.625" or ~67mm. Think they will work with 285 40's?

Should I be trying to get back to the original aspect ratio? 245-45r16 that would make a 516.65mm tall tire. So a 285-30r17=517.3 (Not Made) or a 275-30r17=514.3 (Not Made) Or try a 285-40r17=545.8 or 275-40r17=541.8. How much woul the speed-o be off by?

Assuming we're all talking about the rear wheels they'll fit just fine with a 17mm spacer.
