This. Can't speak for the 944 manual, but Haynes manuals are notoriously awful for a lot of other vehicles, especially anything that isn't a mass-market car. Anything that looks questionable I try to confirm with a second source.
Assuming they're correct. When they're not, it can be a costly assumption.
The first time I learned this, it resulted in a cracked aluminum coolant flange.

Any sort of milled or polished gasket surface should also be masked.
OP, looks great!

Progress update
Here are the steps I took:
wire wheel as much as possible (makes it shiny)
glass bead blast the nooks and crannies (makes it white)
clean in dishwasher (makes it dark grey)
For the lettering, I then sanded starting at 80 grit and going up to 2000. Then I buffed with an angle grinder and aluminum polish. Probably could have done better but the buffing pad was getting eaten up.
so now I know I can polish, I just don't think I want to polish all the nooks and crannies to a chrome finish. Will consider options. I just did my manifold in wrinkle red, so I could match that, but that's a lot of red.

Glass bead works really well. I thought about buying the Harbor Freight unit but instead purchased a similar bench top unit from Eastwood. Before and after pictures below for reference.
And after some polishing and clear coat. These things can clean up really nicely!
