Unless the cooler has huge end tanks or other areas that completely block airflow the oil cooler's position in front of the radiator shouldn't have a really noticeable impact. The rad is SO BIG...
OP: first thing I'd try is reinstalling the 2nd rad fan...even at speed maybe it is powerful enough to make a difference.

Ok, I ordered a late dual fan assembly from my buddy John Graves, since I cut out the second fan on my housing. And secondly planning to cut the middle bar out of the facia since its PCA legal for more cooling airflow.
It's a little dark, but removing between the blue tape outlines

Ok, I'm happy to report the car is running nice and cool with oil temps never over 210 deg. This was today flogging it for 50 minute sessions in 90+ deg temps. I added back the second fan (AC) directly behind the oil cooler and cut out the section of valance in front of the radiator.
