New leather seat covers
Just ordered these.
The options I chose should match stock seats exactly, down to the perforated inserts and piping line.
Can't wait!

I read that entire thread, and many other threads. James Chimney's thread on pelican is more complete. The whole of my research shows Lseat should be very nice. They actually emailed me back and forth last night and this morning, helping me pick the right options. I've had a good experience with them so far. I had a problem with my first order, which was nobody's fault, and they quickly cancelled it. Then, I simply asked for a holiday coupon code for my new order and they even gave me one. You can try code P9SDEW4ZZ for 2% off. I saved $7.
I am hoping they learned from James Chimney's bad reviews. A decent company would make improvements.
After I expressed concern about a large package being exposed on my porch, they offered to include signature service upon delivery. The communication has been seamless. I'm wary of what's to come but I feel good about this. Now I'll have to wait a little while, because it's a custom-made set.

I posted in the other thread but I forgot about updating based on what eventually happened.
I don't have any pics on my work computer but after ~3 months the overall look is vastly improved to how they looked immediately after installation. I spent about 3 hours steaming the seat foam to get it closer to the original size prior to installation. It might help to buy new seat foam but I think the difference would be small. After installation, I spent about 5 hours with a heat gun and steamer smoothing the leather. If I were to do it over again, I would steam the leather during installation to help with some of the bunching. With exposure to late summer heat, the leather relaxed a bit more and while there are still a few wrinkles, it looks much better. It's still obvious the seat covers are non-OEM because of the heavier grain pattern in the leather. The overall leather quality is good and the seats are both soft and grippy. Much grippier than my factory sport seats in the 951.
I could have spent double the initial investment and probably came out with a better overall product but my seats were chewed up and I needed a cost effective solution. For sport seats, I don't think there's a cheaper option out there. YMMV though.

I think the hardest part is the install. I almost think it is worth it to send them your seats (and pay all that shipping) to have a tight install by those that made the covers. Otherwise, you are dealing with the finger pointing.
Installer: Covers weren't done right.
Provider: Installation not done right.
Getting them wrinkle free (like factory) after the install is the hard part.
Good luck.

ramius, that's good to hear. Pictures would be great! Can you post some good shots? I have a handheld steamer so I will use your suggestion. I also plan to shop around for some padding/foam in order to recreate/replace the degraded/ripped foam, and get the best fit for the new cover.
Also, how did you order sport seats? Did you have to request them especially?
