I was planning on covering my dash cap in leather grain vinyl and I was wondering if anyone could recommend an adhesive glue that would stick to plastic but not ruin the vinyl. I used liquid nails on the plastic piece to cover the speaker hole (I am covering the whole dash cap including the speaker) but I think that will be to harsh for the vinyl.

Use 3m adhesive just spray the leather then the cap. Next wait a few minutes for it to get tacky then stick them together you better get it right because you won't be able to pull them apart. You can get this at all parts stores even Wal-Mart.
