Post Car runs hot

My 86 951 runs really hot at times. It seems to go up and down allot on the temp gauge. Installed a new thermostate and fan switch and nothing has helped. Can i get a fan switch that runs at a cooler temp? Any ideas?

check the grounds under the dash, and the connectors on the sending unit...the main ground from the battery to the back of the engine on my car was corroded, I replaced that and cleaned the connectors above, and most of the gauge dancing stopped....it could be over heating of course so don't take chances, to get at the sending unit, remove the air boot under hood...be careful, if it is original it is delicate. two sending units, clean contacts on both might fix problem
