you almost certainly flooded the car out, or were dumping HUGE amounts of gas into the exhaust. if you didn't flood out the car, check stuff like your FPR for a ruptured diaphragm.
you load a big canister full of fuel, apply some heat, and it's a bomb. it IS ungodly loud...I've seen it happen to a couple cars.

The "steel wool" is likely the sound deadening material of a glass pack muffler. It looks like a cheap muffler with rolled, not welded, seams. I bet the inside rusted out, allowing the glass pack material to clog the muffler's outlet.

It also had strong exhaust odor but not what I would call rotten egg which is how people describe the cat smell. So I changed the rear hatch seal and that helped some but not totally.
It also was a bit sluggish and would not go all the way to redline.
So there were definitely some signs but a lot of other things going on as well

The car is an 86 951. Now that it happened I have been doing some research and there were definitely some classic signs of a blocked cat. It was idling rough so I recently changed all the vacuum lines were wired incorrectly and several were old and brittle so there were definitely vacuum leaks. It also had a cycling valve in place with manual boost. After that it still idled rough so I was thinking ISV.
How long has it not been making boost? Failure to achieve high RPM?

It was actually boosting to 1.8bar but it would not rev to the redline (basically about 5k rpms was about the most it would do). Also top speed was a little over 100mph

This happened to me in a 924S during a race at Road Atlanta years ago. A piece of the internal muffler broke off and blocked the outlet to the muffler. It blew the top out of the muffler and punctured my gas tank. Fortunately no fire but it could have been really bad.
