How old is the waterpump? you mention the car has 47K miles.. when was the last time belts/wp were changed out? I'd imagine if it is failing, it can not keep up with load demand of "speed" or higher rpm. But when the car goes back to idle, it has sufficient pumpage to cool the car.

I also agree that the thermostat could be suspect, but I would expect the opposite symptoms.
