How challenging is it to replace body panels (quarterpanels, front fender thing, doors, etc) with minty salvaged/used ones, if I already have them?
If I were to have a shop do it, how much would they charge me for installation (NOT including paint)? Anyone have experience with this?

probably yea
but you might find a nice shop.. shops dont usually like letting YOU do the part finding and painting.. but if you find one that doesnt mind.. hell.. i bet you could get them to do it cheaper. call around. thats another problem, most shops HATE giving quotes over the phone =/

They don't like you finding the parts? Hm.. I don't want to replace with OEM because theyre super expensive compared to the used ones from Auto Parts Plus or whatever it's called.. the ones who carry really inexpensive body panels.
