Does anyone here now how much h/p you lose when you have the a/c on.

it would be a percentage figure, i would guess less than 2 %. HP and about 3% TQ You can calculate it on flywheel HP and the loss from the torque it takes to turn the pump. The manufacturer should tell you normal and "worst case" consumption. Remember that anything that drives of the crank eats HP and TQ. On my 580 Hp 535i racing BMW we saved about 18% by just removing the fan which was bolted to the crank to a dual electric model and the alternator to the prop-shaft. Some people. might also mention the rotational "drag" you get with moving a heavier abject or in this case an object that requires more force to move. That is why some company's can tweak up to 5% out extra from your car by just installing lighter weight pulley's on.

PS. There is a side-note though. There will probably be a cut off point where the effect felt by the extra load could even out, that point would differ from every single setup.

Hmm, I've been told that it automatically shuts off (other than the fans) during full throttle, anybody know if this is true? (to test, go to full throttle and hold your hand in front of the vent and wait for the cold air to stop???).

Mine does quit blowing cold when hard on the throttle, can hear a change in airflow also...

My mom's car - thats another story... '03 Sebring, NO power whatsoever with a/c on. a dog. hah (more excuses to drive the 944, of course)

944's are not wired to cut the compressor during full throttle, if you modify them to do this you have to add a circuit to only allow it to recouple at lower RPM's or you will burn the clutch. The fan speed setting has no effect on the load of the A/C compressor, the compressor runs at one setting only, evaporator temp and condensor temp would be factors.
