yep. if you don't get up to operating temp for a while you'll get condensation in the oil.

If the proper oil for the ambient temp is being used then you should do as all of the previous posters have mentioned and just drive it right after you start it - albeit gently- until it hits operating temp.
The 'W' in the oil weight tells you that it is mutligrade approved for winter time use and if you live somewhere that you can really freeze *** then the low temp rating should be 5W or 0W.
Keep in mind also that the coolant will hit operating temp twice as fast as the oil because of density differences. The only way to know that your oil is at the right temp is to see that the pressure has gone from the 4.5 bar or so it should start at to the 2-2.5 it should be at idle when hot.

Of course then again you can do like I did and move to Hawaii so that you don't have to care anymore...
