Has anybody attempted to remove the hardware and seal from the stock metal roof?

If readily removable and can be recycled, such stock parts would make a good base for a new acrylic panel.

Such a panel would not be too difficult to fabricate, using the stock metal panel as a template.

There should be a sarcasm font.

Huh? That big square thingy same color as my car that sits in the hole in the roof and goes up and down and can be removed is not metal?

Whoda thunk? I never put a magnet on it, so assume it's metal like the rest of the car.

No matter. You could still use it as a template for an acrylic see-through panel, esp. if the hardware is removable.
