Clark's Garage has excellent procedures for removing and installing the head (and LOTS of other good procedures as well). Once you're at the site, click on Garage Shop Manual on the left and then scroll down to Cylinder Head.

Yeah, no offense, but, if you are asking that question. It's most likely not a project that you'd want to just dive into. Even with good instruction, it's not just a beginner's job to wrench away at. You don't want to cost yourself extra money with oopsies and that potential is definately there with this job. Good luck tho.

Okay, it's just I see the name 'vwvortex', then a question like 'do I need to take anything off to remove the head?' and it made me wonder....
I mean, look at it. The cam tower, intake manifold, timing belts all need to come off, the fuel rail and exhaust manifolds need to be pulled out of the way, etc.
