I was astounded at prices in a recent issue of Hemmings - there were 3 cars 914-6s) advertised between 25 and $30K. I checked the web on one and it had already sold. Is this the 'brief moment in time' that 914s are valuable?!

Those are 914-6's. All 914's are valuable but the prices you are refering to are for 3 of 3000+ cars made over a period of 3+ years. Figure if we are lucky, half have survived the last 39 years. I doubt that though. Probably more like a quarter. Limited run Porsche models have always been sold at a premium. These are no different. Unique history examples such as the 49 or so factory GT cars and cars with racing livery and or history are selling for much higher than those numbers. Let's not even talk about 916 models. Last I heard one in the Bay area had turned down a quarter million dollar offer. Imagine you could buy one of those 914-8's! Millions easily.
So no, this is not a brief moment in time. It is a trend and the price of admission will continue to rise.
I have to say I'm pleasantly surprised, and also wondering about letting my son cruise around in my -6. On one hand it is getting driven more than the 100 or so miles it normally gets each summer, and he's having a ball. I presume that originality counts for a lot of the value? Mine was lowered and stiffened, has "S' brakes, and non-standard flared fenders... Solid car with original engine and Marelli distributor though... Can I fantasize about it being a $25K car?!
