Default 911sc Oil temp gauge low but compartment feels really hot

The oil temp gauge in 1979 911SC rises gradually after start to just a little above the cold lower box in summer. But when I open the engine lid everything feels very hot. Many parts can't even be touched, and immediately after turning engine off pinging sounds come from the bottom of the engine. The heat exchangers are not turning red, so I guess its not a lean running condition. Any help and advice is really appreciated. (BTW car has MOCAL front mounted cooler)

You could have a bad sender or gauge, or a bad connection. Do you have an IR thermometer to measure temps of the case? Where do you live?
