i have multiple annoying leaks and am going to drop the engine. What should i have done while its out? I have a couple of things i know should be done from the 101 projects book, but does anyone have a good list of what should be done while the engine is out? gaskets for valve covers for sure, oil pressure swtich? suggestions?

Not sure what kind of 911 you have, but here's a list of what I did/replaced over the last two weekends:
oil (Castrol 20/50) and filter (Mahle), fuel filter (Mahle), spark plugs (Bosch WR7DC, crankcase breather cover gasket, internal thermostat gasket, oil pressure switch, flywheel, flywheel seal and bolts, Sachs spring-centered clutch disc, pressure plate, throwout bearing, Weltmesiter G50 fork and shaft upgrade with bronze bushings, transmission main shaft seal, engine support cross member, left and right side chain cover gaskets, valve cover gaskets, adjusted valves, painted valve covers

There's a list on the 911SC FAQ and an article on rebuilding the CIS airbox on tech.rennlist.com under 911 engines that goes through what should be looked at on the top of the engine.

I would just take a real hard look when you start taking off peripheral "stuff", juts look for evil.
--oil co0ler seals + clean oil cooler
--check aluminum manifold vacuum tube that runs around the front of the engine, mine had rubbed thru the metal
-- front oil sender, this tends to "blow" and is cheap to buy, but very hard to fix in vehicle
-- oil return tubes...if you have an engine stand where you can flip engine!
