The first true Porsche engine and car was the 928. Designed from the ground up by Porsche with no influences from other designs.
Sorry, but everything else was just VW hot rods, although they are still nice.
True the 968 4-cyl was excellent, but still just half of a 928 engine at best.

I'll get some protective gear on-
Best Porsche street engine- Cayenne V8 NA or Turbo
Also any 911 with the Gt1 derived block.
Best Porsche street car- I'll say the 959 was the best Porsche if car ever.
Not enough experience with racing Porsches/engines, sorry.

front page coverage!
Maxim tried their hand at ranking the greatest Porsches ever, seems fitting for this thread...

Ive never owned one, and they come with their engine issues, but the twin plug NA 964 and 993 seem to be the best aircooled Porches for performance as a stock engine car.
GT3 cars are the best of the modern cars.

To me, the 917/30 was the ultimate Porsche engine. Once Bosch and Penske worked out the fuel pump issues, the car seemed to have unlimited horsepower (see "The Unfair Advantage" Donohue).
Best car? Geez, I don't even know how to answer that. Maybe the first Porsches, the Gmund 356s. That's the car that got the show rolling. Before that car, Porsche was a designer and not really a manufacturer. Maybe the designs that Ferry et. al. were forced to do to pay Ferdinand Sr's bail after WWII? Those were significant.
I'm liking the Cayman S but it's more like a kitchen appliance than a real collectible like an aircooled 911 is. If there is one car that I would say represents the pinnacle right now, it might still be the Carrera GT. 5.7 liters, V-10 carbon fiber used extensively in the body panels, carbon rotors, etc. etc.

i agree with rusnak, the Gmund cars, if not for them we wouldn't be having this discussion. and with jimcat3, the one you own (love)... then i'll have to evolve to the 917's... and 919's. LeMans the true test of man and machine.
