The brochure I have for the '89 SA Carrera makes reference to the "25th Anniversary Special Edition" of the 911. On the window sticker that I have for my car it states "Silver Anniversary Package" at $4803.00
All cars had the silk grey leather with black piping. There were two ext. colors: silver metallic and satin black metallic.
500 were produced. 300 coupes with 240 in the silver metallic and 60 in the satin black metallic. 200 cabs with 160 in silver and 40 in satin black.

The leather in my 89 SA is definitely a different grade than the leather in my 88 or other Carreras in my local club. Since I don't know all of the history of my car, I can't say for sure that it is the original leather that came in the SA package, or if it has been re-done at some point, but it sure looks great! Like almost new!
You might consider identifying who does really good upholstery work in your area, pay them a vist and ask them to explain the process of how they would go about matching it. And if you feel comfortable with the shop and the person, have them re-do them. Seat repair and renovation is not terribly expensive.
I could shoot a good clear photo of how mine looks, if it would help.

the different leather you see is most likely raff or draped leather, there is more leather used and gives the look of a leather couch
there are 2 sponsors that do custom leather work and both are capable of doing seats in just about any color combination you want
I have used both of these guys to do different things on my cars and I'm sure most would agree you won't find a better source for standard or custom pieces for any Porsche
