Post vehicle weight and tire pressure

Dumb question. The id plate on the driver door jam indicates 3418 GVWR. I take this to mean total weight with luggage and passengers. The owners manual lists curb weight at 2756#, plus 661 load capacity. Are my assumptions right?

Also, how valid are the posted tire pressure figures given the wide range of tires available? I just put Kumho tires on and wonder if these pressures still apply?
