Could anyone advise me on reputable shops that they have used in Switzerland or Germany or refer me to someone who would know.

I own an '87 Carrera (US model) with 95,000 miles and am facing relatively high oil consumption -- 1 liter every 400 miles or so. It's obvious I need a top end rebuild and, as I'm in Switzerland, I was thinking that it might make sense to have the work done in Germany, maybe even by Porsche if they work on older models.

In addition to the top end rebuild it may make sense to have the entire motor revised, a clutch rebuild (it too has 95k) and have the transmission controlled. There are probably a lot of other things that would be better done when the engine is out and given the age of the car. Here is where I need some sound advice from someone who really knows these cars.

I'm in Switzerland too (Zurich). Still bought a '85 Carrera Coupé with only 18'500Km. The Service is made by Porsche Kasper in Wil (SG). There's also an independant in Oerlikon (ZH) called Dättwyler (who has a very good reputation.
