I have an 87 Carrera cab and was wondering what wheel/tire size combinations will fit without any modifications. Also, how will the changes affect the cars handling? Currently have 15x7 original Fuchs wheels in front with 195/65/15 and 15x8 original Fuchs wheels in the rear with 215/60/15

I also have a 1987 Cabriolet - best year ever! I also had 15 x 7/8's on my car that are now currently adorning my shelf.
I upgraded to 16 x 9 Fuchs rears with 245/45/16 and in the Front Porsche Part # 951 362 117 00 16 x 8 Fuchs with 225/50/16.
I did have to roll the inner fender lips about 1 1/2 inches to make the front fit - especially on the driver's side. Rears have plenty of room.
Here's a picture.
If you are adverse to rolling anything - then 16x7's with a 205/50/16 - I have heard will fit with zero issues.

I have an SC with Fuchs 16x6 w/ P205/55R16 on the front and 16x7 w/ P225/50R16 on the rear that were a factory option. You can bolt these on without encountering any handling or size issues. If you want to retain the original look of Fuchs, you can find these on eBay. Original forged Fuchs are also a great wheel from a tech standpoint ... very strong & light. Make sure they are original, though, as the knock-offs may not be forged.
I understand increasing one size to 16x7 w/ P225/50R16 fronts and 16x8 w/ P245/45/16 rears are a snug fit, and that rolling the front fenders *might* be required. Again, original Fuchs can be found on eBay, but the price jumps about 50%.

You have quite a few options

just put some 205/50 & 225/50 tires on the stock 7 & 8" rims, for street use or A/X this is a great setup
205/55 & 225/50 on 7 & 8 x16" Fuchs will fit w/o any appreciable issues
205/55 & 245/45 on 7 & 9 x16" Fuchs will also fit great but are a bit more expensive and for street use are only there for appearance
if you like to track the car option 2 w/ 225/45 front on +23.3mm o/s 8x16 Fuchs is a nice front choice
