Plasti Dip silver seat-backs?

I wouldn't use Plastidip on something in your interior. I've never seen an example in real life where it doesn't look pretty underwhelming, even when done by "professionals". For the random exterior part / wheels its less of a concern since those will see a lot of abuse anyways.

A wrap done prefessionally (or with a couple of trials and errors by you and a friend) has more chance of looking OK than plasti dip. plastidip is great for badges and wheels but I would not use it on a large relatively flat surface because it's really hard to get even coverage and it will look like a bad spray paint job. Plus the wrap is easily removable if you get bored or wants to change the look. Seats are easily removable (4 bolts and 1 plug underneath). I dont know how the back meets the seat but if you can insert thin object you could tuck the wrap underneath.

The 2-way seats in my 996 GT3 come with seat-backs painted in exterior color which used to be an option. I wonder why they don't offer that as an option any more. I think it would be a widely chosen option especially on Boxsters and Spyders. Also don't understand why the leather seatback option is only offered for the 18-ways and not for the 2-ways. The clam-shells look identical.

Original poster here. Thanks everyone for your thoughts! Definitely going to add the Light Design Package, Smoking Package (surprised), Steering Column in Leather.
To consider sun visors in leather/racetex, automatic climate control, auto-dimming mirrors and heated steering wheel. Not sure yet on the LED lighting package and silver seat belts I had in there. Super excited for the car.

Yes, for some reason 2-ways can't have the leather back option. Heck, I'd pay few hundred $ to just have them painted black. Wrapping them with leather after-market is always an option. And 18-ways are a big no for me mostly due to the added weight of all those motors. Both 2-ways and LWBS fit me perfectly so the choice for me is between those two.
